A wonderful roast with lots of intramuscular marbling, but without thicker strips of fat like the Chuck Roast. Very uniform in texture, these make a great oven roast (they come tied and ready to go), a nice shredded beef, or dice it up and use to replace ground beef in recipes like chili (if you haven't yet, be sure to try making California Chili with this great cut).Â
