Often referred to as a "fancy tri tip", it's great as a roast or cut into steaks! Leaner than tri-tip, with a pronounced sirloin flavor. Performs equally well on the grill or roasted in the oven. Please be aware that due to the dry aging process we apply to these Reserve cuts, most of the fat cap is trimmed off on our Sirloin Caps.
Our Reserve Beef is our best of the best for conventional, grass fed & finished beef here at Buy Ranch Direct. Reserve Beef is aged longer than our standard beef (approximately an additional week) and is cut at our most experienced processor. A treat no matter what you choose!
