Beef Wagyu Boneless Short Ribs - BARLEY ENHANCED
Boneless Short Ribs with the highest fat content we offer! These short ribs have A LOT of fat, up to 50% fat by weight (please see pictures), so you may need to trim some off depending on your recipe (which you can use to easily render your own Beef Tallow!). This is why they are being offered at a discounted rate of $20/lb, instead of the normal $28/lb price. The meat that's in them is incredibly tasty, and is tender enough to be marinated & grilled if you prefer.Â
We decided to try something new on this single processing batch of American Wagyu steers; rather than offer these cattle only grass like we normally would, we also provided them with a small amount of Organic Barley during the last month of their finishing time. This helped them bulk out and helped keep costs reasonable for these exceptional examples of well marbled beef; they were however eating grass their entire lives.
This beef has the highest fat content of any beef we offer, and has a fat texture closer to that of olive oil than to traditional beef fat.
