Beef Wagyu Trim Fat - BARLEY ENHANCED
Our go-to fat choice for rendering Beef Tallow at home!
Due to the record setting droughts and fires of 2021-2022, we decided to try something new on this single processing batch of American Wagyu steers; rather than offer these cattle only grass like we normally would, we also provided them with a small amount of Organic Barley during the last month of their finishing time. This helped them bulk out and helped keep costs reasonable for these exceptional examples of well marbled beef; they were however eating grass their entire lives.
This beef has the highest fat content of any beef we offer, and has a fat texture closer to that of olive oil than to traditional beef fat. Comes as one whole piece or several smaller pieces; we recommend dicing the fat prior to rendering for increased yield (shown below).

Please note, this product will not say 'Wagyu' on the label, but can be differentiated from our normal fat by its barcode number of 230639.
