A classic roast that's nice any time of year! Once portioned, it's known as Center Cut Pork Chops; this is the pork equivalent of a Prime Rib Roast.
The moderate fat cap and small rib bones will keep this cut moist and flavorful for a dry-roast application. This is also one of our absolute favorite cuts on the rotisserie or smoker; the meat around the ribs comes out almost like bacon!
