Beef Skirt Steak is similar to flank steak in marbling and flavor, but with a larger, looser grain and thinner steak. Excellent cooked whole, cut into portion-sized steaks, or even sliced thin and stir fried. Takes a marinade very well, but you don't need to marinade this steak to enjoy it's wonderful flavor, texture and marbling.
Note, it's very important to slice this cut against the grain to serve, as the grain is very directional; slicing with the grain will result in a chewy steak, so be sure to take a look at the grain (runs lengthwise) before slicing.
