One of the most tender steaks available, this cut also goes by the names New York Strip or Strip Loin. Leaner than a ribeye, more tender and marbled than a top sirloin, this is our favorite steak to cook in a pan. Due to its fairly uniform texture, this steak lends itself well to sous vide cooking, and also works well with a quick sear and a few minutes in the oven to bring up to temp.Â
