Our Petite Tenders, simply cut into Filet Mignon style medallions. 2 per pack.
Often referred to as a "butcher's cut" because of its low cost, relative scarcity (only 2 per animal) and hidden value; this cut is from the Chuck region, so it has lots of flavor, but is still fairly tender. Takes a marinade extremely well; due to it's flavor, even after marinating all day the meat still comes through nicely.
