This is a special, 1-time cutting of a mature Highland Angus steer. This meat will have a more intense flavor, less intramuscular marbling and potentially a firmer texture, but will reward the cook who is willing to coax out it's unique characteristics for a wonderful memorable meal!

We don't typically process older animals like this one (we typically process around 3 years of age), so if you've been curious about trying something new we highly recommend it!
This animal has been grazing on the same beautiful, all natural, nutrient dense blend of grasses at Diamond Mountain Ranch as our other cattle, and was processed by our Northwest Premium processor.
