20-Minute Garlic & Honey Pork Belly Stir Fry
Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
Makes: 2-3 servings
Please note: This recipe works great with skinless pork belly; however, if using skin on pork belly make sure to remove skin. The skin will not have time to fully cook and will be chewy.
Ingredients
1 lb pork belly (skinless), sliced thin with excess fat trimmed (¼ inch thick x 2 inch stripes) If using skin on pork belly make sure to remove the skin!
1 tsp avocado oil
1 medium yellow onion, sliced
2 tbsp rice wine vinegar
2 tbsp soy sauce or coconut aminos
2 tsp sage honey
2-4 garlic cloves, minced
1 tsp kosher salt
2 green onions, cut into 2-inch pieces
½ cup snow peas or snap peas, cut in half
Instructions
- Prepare pork belly: Open and remove meat from the packaging. Place on a cutting board, pat dry with paper towels. If there’s a large fat cap, trim off excess fat (if you like). Cut into ¼ inch thick x 2 inch pieces. Let sit at room temperature until all ingredients have been prepped. Set aside.
- Make the sauce: In a small bowl, mix rice wine vinegar, soy sauce, sage honey, garlic and salt. Set aside.
- Sauté the veggies: Heat avocado oil over medium-high heat in a large cast iron skillet. Once the oil is hot, add the sliced onions. Sauté for about 3 to 4 minutes or until translucent.
- Add pork belly: Push the onions off to the side and add the thinly sliced pork belly in a single layer in the center of the skillet. Cook for about 5 to 8 minutes or until golden brown. Mix often. If there's to much fat for your liking, tilt pan and use a spoon to remove fat. However, make sure to save that fat for roasting veggies or frying eggs!
- Get saucy: Drizzle the sauce over the pork belly and onions. Turn the heat to high, and sauté for about 3 to 4 minutes or until the sauce has thickened.
- Time for greens: Add in the green onions and snow peas. Sauté on high heat for another 1 to 2 minutes, mixing well.
- Let’s eat: Remove from the heat and enjoy this dish by itself with more crunchy greens or add some rice noodles for a hearty meal.
- Leftovers: Best eaten warm the same day; however, you can store leftovers in an airtight container in the fridge for up to 2-3 days. If you have any! Reheat quickly on the stove.
