Equally as good on the grill, in the air fryer or in a skillet, these chops have a little more texture and a little less fat than Rib Chops. Due to their leaner nature, these steaks are well suited to hot & fast cooking & take a marinade very well, although we like ours with just salt & pepper!
While we typically do mixed/open breeding at the ranch, for this processing batch we've decided to process some pure-bred Iberico pigs! Iberico is commonly considered "The Wagyu of Pork", and is some of the best pork we've offered in years!
